Rice Salad with Cherry Tomatoes and Basil Tofu

Ingredients

  • 300g of rice
  • 100g of cherry tomatoes
  • 70g of pitted olives
  • 1 tablespoon of desalted capers
  • to taste extra virgin olive oil
  • to taste pepper

Preparation

  • Cook the rice in plenty of salted water for the time indicated on the package to achieve an al dente cooking.

  • Meanwhile, wash the cherry tomatoes and cut them into quarters.
    Transfer them to a bowl together with the desalted capers and olives.

  • When the rice is ready, drain it and cool it with cold water to stop the cooking process.
    Then, add it to the vegetables.

  • Add the Tofu with basil biolaband mix well.
    Season everything with pepper and a drizzle of raw olive oil.

  • Let it rest in the refrigerator for at least half an hour before serving.
